Plant-Based Filet Mignons Go Against The Grain With ‘Premium’ Marbling & Crust

While several vegans might be satisfied with cauliflower steaks, a large part of the community gave up meat for ethical or environmental reasons, and not because they don’t enjoy the taste of it.

Those who fall in this camp will not need to put their principles at steak, as Juicy Marbles, a company from Ljubljana, Slovenia, has developed a close plant-based equivalent to the fanciest steak cut of all, the filet mignon. According to the firm, this marks “the first line of raw, plant-based, whole cut steaks.”

Similar to regular filet mignons, this version—produced from a patent-pending ‘Meat-o-matic Reverse Grinder 9000’—is cut from a plant-based tenderloin, which Juicy Marbles calls the ‘Juicy A5 Tenderloin’. Its marbling mimics the “lush and evenly distributed” fat structure in cow tenderloin, quickly cooking up to develop a pleasant crust.

Juicy Marbles says the filet mignons deliver a “bold, rich flavor experience” while their middles retain a “velvety and supple” texture that “melts right in your mouth!” And, holding up to the standards of the tenderloin, you can cut these with a fork.

“The biggest challenge was getting the right fiber alignment and intramuscular fat structure—the marbling,” shared co-founder Luka Sincek in a press release. “The most expensive steaks in the world are known for their lush marbling. It takes a lot of energy and a rare breed of cow to attain that. With plant meat, we control it and, thus, over time, can scale up our steak production and bring down the price. Eventually, we'll be able to make the most premium meats attainable for everyone.”

Real filet mignons are notorious for being expensive, and these are too. For 600 grams of Juicy Marbles filet mignons, which will feed four, they’ll set you back US$147.58.
