Plant-based milk has been growing in popularity over the past few years, and we have been quite spoilt for choice. It can be made from nuts, rice, coconuts, and even potatoes.
But how do you formulate it so that it makes the perfect replacement to the dairy milk that many are used to? For NotCo, the company behind NotMilk, the answer is artificial intelligence.
The model created to produce this dairy alternative utilizes an algorithm that predicts which plant-based ingredients are most like animal components, thus should be mixed for the most optimal results.
Various combinations are considered by the AI to result in something as similar to milk and other dairy byproducts as possible. Through analyzing animal products, the composition can be replicated using similar molecules found instead in plants.
This means it’s not just milk that can be explored and replicated, but there’s also the potential for things like meat alternatives. An example the firm gives is of pineapple and coconut, which contain molecules equivalent to dairy milk.
The AI is named ‘Giuseppe’, affectionately known as Genius G, and has enabled NotCo to produce 1%, 2%, and whole NotMilk. None of these contain anything like gluten, lactose, soy, or cholesterol, which makes the milks suitable for a wide range of diets.
So far, the ingredients that make up NotMilk include things like pea protein, water, sunflower oil, and pineapple and cabbage juice concentrates.
Machine learning enables Giuseppe to learn from its past inventions, which means that new products can be developed faster and with more accuracy than their predecessors. For example, while NotMilk 2% took 10 months to create, NotMilk Whole took just two.
