In February, Betterland made a splash when it launched Bettermilk, replicating the creamy staple beverage without the need for cows by using an animal-free dairy protein.
Now, the EVERY Co, a San Francisco-based food technology firm, has come up with the world’s first chicken-free egg white. Dubbed the EVERY EggWhite, the cruelty-free product is said to deliver the same “height, foam stability, aeration, and texture needed for baking” as regular egg white.
Without the use of a single animal, the company used precision fermentation to mimic real animal protein to make the egg whites. While the final offering is fit for vegans, it won’t be suitable for those dealing with egg allergies as it uses the same protein formulation found in real eggs.
To put this revolutionary ingredient to the “holy grail” of tests, the brand has collaborated with Chantal Guillon, a French macaron maker, to use the EVERY EggWhite in its first animal-free desserts.
Limited-edition macarons will be made in Chantal Guillon’s San Francisco SoMa outlet, and shipped nationwide. The pastries are available in boxes of six (US$28), with flavors including Earl Grey, passionfruit, pistachio, strawberry, Tahitian vanilla, and dark chocolate.
