Pretty Cake Made Out Of Mochi Will Wish Chew A Happy Birthday

If NYC’s non-melting ice cream—which is made with a chewy marshmallow exterior and ice cream bonbon interior—sounds like something that would appease your sweet tooth, you might want to take things up a notch with a cake that promises a similar texture.
Manhattan-based Mochii NYC handcrafts mochi—or Japanese rice cakes—with flavors that go out of the norms of green tea and sweet red bean paste. Here, owner Mimi Lau experiments with a traditional glutinous rice flour base using modern favorites like Nutella and Oreo.
The cherry on top is Mochii NYC’s customizable six-inch mochi cake, which is made to look like the unassuming, classic birthday cake—but has more bite and pizzazz.
What appears to be a clean layer of icing or fondant is really rolled-out mochi with sprinkles and toppings, but that’s only the beginning. Dig into the dessert and you’ll find a homemade vanilla bean ice cream filled with frozen fruit.
According to Lau, a trio walked into her store to pick up their cake order. Instead of just checking it for imperfections, they requested for her to cut out three slices so they could eat the cake right away. “No one ever said you need to order a cake for special occasions, just satisfying that sweet tooth,” she recalled.
