Japan Invents Naturally Blue Chocolates Tinted In Colors Of Day & Night Skies

In 2017, the world was introduced to ruby chocolate, a naturally pink-hued variety that is now dubbed the “fourth type of chocolate” in the world. This year, Kit Kat Japan commercialized it, making it available for all by creating a candy bar from ‘Ruby’ cocoa beans.
Japanese inventors have yet again shot for the skies with new naturally tinted blue chocolates of two tones.
Launched by novelty store Village Vanguard, the chocolates are available in a couple of styles: the first resembling the complex night sky, and the second takes after the still winter atmosphere “where the air remains clear throughout.”
In place of synthetic coloring, the brand uses ‘Natural Blue Apple Jam’ sourced from Aomori prefecture to add pigment to its chocolates—though not without a few challenges, especially for the darker variety.
Since the jam is translucent, Village Vanguard explained in a press statement that it “had a hard time” coloring the chocolates a deep blue. To counter the problem, the company decided to add blue-colored herbs from Thailand. This resulted in the chocolates looking as profound as the tints they’re inspired upon.
Served in an exquisite night blue box, the two versions encase square-shaped cookies of different flavors.
The light blue ones coat special cookies made from “carefully selected” cheese and apple chips from Aomori. According to Village Vanguard, they’re the less sweet counterpart of the two.
The darker hued ones are decorated with gold leaves and silver foil to resemble stars in the night sky. They’re wrapped around plainer and crunchier cookies.
The chocolates will debut on 14 February 2018 at the Village Vanguard site, and are priced at JP¥2,160 (US$20) per box of six cookies. Only a limited quantity will be made available.
