Veteran hospitality entrepreneur Sean Christie’s latest venture, Carversteak, will open its doors at the brand-new Resorts World Las Vegas casino at the end of the year. And to set itself apart from the countless gourmet restaurants on the strip, it’ll be serving up a Rolex with its food and beverages.
Guests at the steakhouse can choose to go for the US$40,000 cocktail package, which will include a version of mixologist Francesco Lafranconi’s signature ‘B Signal’ cocktail, an entire bottle of the rare Clase Azul Ultra tequila, a decanter, a cocktail class with Lafranconi himself, and a Rolex GMT-Master II ‘Batman’ two-tone timepiece.
“We’ll actually lose money on this. There’s always a lot of interest in those types of items when we put them out. We only have one of them,” explained Christie, who purchased the watch from a Keep Memory Alive charity auction.
“It’s a way for someone to go back home with a piece of Carversteak, with a story, with the experience of Las Vegas, which, again, is always bigger, bolder, brighter. And I love that the money went to charity, which is the most important part of the story.”

In addition to the pricey packages, Christie didn’t hold on the amenities at the restaurant either. According to Robb Report, he spent nearly US$1.5 million on audio-visual elements alone, with a giant LCD screen spanning the entire length of the 70-foot bar. It will display animated art, private messages, or turn into a huge screen for sporting events.
“The space has to be able to transform, especially in Las Vegas. It changes depending on what convention, what fight, what concert’s going on,” he remarked.
Interestingly, guests at Carversteak will get to pick their very own custom-made knives. Christie and Head Chef Daniel Ontiveros wanted the experience to be an interactive affair, with servers presenting a wooden box with five different types of knives, each with its distinct blade and handle design.
“It’s kind of a ‘choose your own weapon,’ if you will. I think it’s just a cool experience. It’s going to be a fun talking point,” said Ontiveros.

After you’ve chosen your steak knife, it’s time to move on to the meats. Guests can choose from Allen Brothers bone-in filets, dry-aged Flannery Beef ribeyes, and American wagyu tomahawks—which has the restaurant’s logo etched onto the bone. There’ll also be Australian and Japanese wagyu available, including prime Miyazaki A5 striploins.
While dining, the mood of the room will be carefully curated by the front-of-house team, with Christie revealing that they have control over every single light and speaker that’ll be adjusted according to the adrenaline and energy in the room.
“If it’s 1am and the restaurant is going late because there’s a giant Tyson Fury fight in town and there’s a bunch of celebrities, hoity people and execs that are entertaining people, there’s probably a lot of adrenaline going on,” said Christie.
“Las Vegas is about bigger, better, and more aspirational. If you just wanted your traditional restaurant, you can get that in your own neighborhood.”
