Impossible Foods Tests Plant Milk That Tastes Like Cow’s Milk, Crackable ‘Eggs’

Impossible Foods, the company reputed for developing plant-based meat alternatives that look, taste, and cook like the real deal, proves in its latest venture that it will continue innovating until the cows come home.
The firm announced in a press conference on Tuesday that it is currently working on Impossible Milk, a substitute for dairy milk with the flavor, creamy mouthfeel and behavior of the original animal byproduct.
Imagery from a demonstration involving cow-based milk and four other plant-derived options, including soy milk and almond milk, reveals Impossible Milk as the closest match to the dairy version in terms of appearance.
Unlike how many plant “mylks” function under heat, Impossible Milk is designed not to curdle when heated, and can even be frothed. Engadget reported that a researcher demonstrated the liquid’s texture by mixing the new vegan milk into hot coffee.
In addition to creating a milk option, Impossible Foods told the publication that it is also prototyping a vegan “egg” that can even be cracked.
Along with these projects, Impossible Foods shared that it intends to double its research and development team within the next 12 months in hopes of “turning plants into meat, fish and dairy foods.”
